Cheese Warehouse Launches New Naturally Smoked-To-Order Cheese

The Cheese Warehouse has launched a range of cheeses which are available naturally smoked ‘to order’ over Hickory, Cherry, Oak or Apple wood chips – ideal for adding a depth of flavour and for meeting consumer demand for naturally smoked dishes.

Five cheeses – Cheddar, Monterey Jack, Mozzarella, Provolone and Gruyere – are available in four smoked flavour profiles:

 

  • Hickory – the king of smoking woods, this gives a sweet to string smoked flavour
  • Cherry – the most popular wood for smoking and often considered to be the best, this gives a sweet, mild flavour that goes with most foods
  • Oak – this gives a strong, but not overpowering flavour that tastes good with beef and lamb
  • Apple – subtler in flavour, apple wood gives the cheese a sweetness and imparts a fruity smoked flavour

Since the cheese is 100% natural, and not extruded as with some smoked cheese, it is available in a number of formats: grated, shredded and batons, ribbons and shaved, crumbed and diced. The different formats make it suitable for use in any number of product applications from Hickory Smoked Monterey Jack in tex mex and New York deli style food to Smoked Mozzarella in Calzone and pasta and Hickory Smoked Gruyere with red fruits, relishes and potato gratin.

These new all natural cheeses will enable food manufacturers to make ‘clean label’ declarations, since from 2013 all smoke flavouring must be declared, with many retail multiples now restricting the use of liquid smoke in own brand products.

Richard Thorpe, Development Director at The Cheese Warehouse said: "Although originally developed as a way to cure and preserve cheeses, food smoking is a cooking technique which is undergoing a big food revival because of the depth of flavour that can be created. The Cheese Warehouse has always been at the forefront of developing new and innovative food solutions in tune with current consumer tastes and this all natural smoked cheese is an ideal and solution."

The Cheese Warehouse Smoked Cheeses are available to order with a 6week shelf-life and a minimum order of 200kg.

With Mexican style foods increasing in popularity, we are pleased to announce that The Cheese Warehouse has introduced a range of Mexican inspired Cheeses to add some Hispanic spice and variety to the cheese board or recipe innovations.

The new range includes:

Cotija
A hard cow’s milk cheese that originated in Mexico. Dry and firm, it has a similar flavour to parmesan.

Chilli Con Queso
The spicy hot kick of chilli gives this blend of cheese an authentic Mexican flavour.

Asadero
This semi-soft, white, string-type Spanish style cheese is ideal for use in sandwiches or melted on cooked food including pizzas and nachos.

Colby Jack
A traditional creamy coloured cheese made from cow’s milk, Colby Jack is named after the town in Wisconsin USA where it was first made. Colby Jack has a higher moisture content than Cheddar making it feel more elastic and has a sweet mild flavour that is ideal for burgers.

Eatwell Cheese from The Cheese Warehouse scoops top Product Award at Footprint Health & Vitality Honours

Eatwell West Country Cheese, the new ‘healthier’ cheddar style cheese produced as part of a joint initiative between The Cheese Warehouse and master cheese maker, Cricketer Farm has been awarded ‘Product of the Year’ and Responsible Manufacturing Honours at the prestigious Footprint Health & Vitality Honours for the foodservice industry.

Designed to recognise achievement in health and nutrition by both operators and suppliers in the foodservice supply chain, Footprint Health & Vitality Honours is a new platform for business to showcase best practise. It also aims to promote the manufacture of healthier products, as well as the implementation of healthy living programmes in foodservice.

Part of the Eatwell Cheese range, West Country Cheese (Cheddar style) has 50% less fat and 30% less sodium than full fat cheddar but still provides the cooking functionality required in the demanding foodservice sector. Suitable for all cooking applications, West Country Cheese can be used as an ingredient in both hot and cold recipes as well as a topping for pizza and as a sandwich or panini filling.

West Country Cheese was initiated in response to the Government’s Responsibility Deal, Salt Reduction Targets and Calorie Reduction Pledge, designed to help improve the health of the nation. As developers of commercial cheese applications, The Cheese Warehouse was able to apply its technical knowledge to Cricketer Farm’s farmhouse cheese making methods to produce a product with the provenance demanded by today’s consumers, all the taste of traditional cheese, but with the lower fat and salt content that caterers – particularly in schools, hospitals and other contract catering outlets – are required to deliver.

During development, the new cheese was extensively trialled using various sodium replacements with the final product using LoSo One Grain sodium replacement to retain the best flavour, texture and cooking capabilities. The finished product was trialled in two primary schools where it was used to replace the equivalent full fat cheese in all recipes for a week.

West Country Cheese is available in a range of formats to suit foodservice requirements including grated, crumb diced, sliced or block. West Country Cheese has Red Tractor Assurance and has been tested and approved by the Craft Guild of Chefs.

New liquid cheese from The Cheese Warehouse offers flexible cost-effective option

The Cheese Warehouse has launched a 100% natural Ready to Use Liquid Cheese.

Available in 8% and 16% fat options the new Liquid Cheese has been developed to replace grated cheese in various applications such as ready meals, cheese and white sauces and cheese stocks.

As well as flexibility in production – the Liquid Cheese is pumpable, depositable and spreadable – the product affords manufacturers considerable cost savings since grated cheese does not have to be brought in and stored.

Using Liquid Cheese also means manufacturers are lessnot dependent on fluctuating dairy prices and can implement more stable pricing of the end product.

And since the product is 100% natural, manufacturers are also able to make ‘clean label’ declarations on-pack.
